AJVAR OR “SERBIAN CAVIAR”

    Be it Serbian or Macedonian, it ultimately comes down to a Slovenian product. The Slovenes were the first to patent the name “Ajvar”, although it is of Turkish origin. What ensued was a legal battle fought in international courts to establish its heritage, thus “Ajvar” has become a brand that is increasingly being produced and exported. Ajvar is a bread spread made of roasted red bell peppers, hot or sweet, which are then pressed to a pulp and cooked. There are other
alternatives with aubergine (eggplant), but the original ajvar is made only of red bell peppers, which have oil added to them while cooking, and nothing else. The trick of the trade is knowing ...
